Rarely does healthy and quick come together in one recipe, but I can assure you they do in this Chocolate Chip Almond Drop Cookie recipe.
We took a road trip with the grands and their mommy a few weeks back. I packed a bunch of great travel food including these flour and refined sugar-free chocolate chip cookies.
They are extremely simple with few ingredients.
They come together so quickly – you’d think it s a ready-made mix!
And yes, they are freezer friendly. I used coconut sugar for the sweetener, but you can substitute any dry natural sweetener. I used Enjoy Life chocolate chips which are allergy free and very delish!
It’s a snack you can feel good about your kids munching on…and you can feel good about munching on too!
One recipe makes 2 dozen 2 1/2 inch cookies. Just about right for gobbling a few and popping the rest in the freezer for a later date. Even the anti chocolate chip guy in the family likes these!

3/4 cup coconut sugar
1 large egg
1 cup almond butter
1/2 teaspoon baking soda
1/4 teaspoon sea salt
1 teaspoon vanilla
1/3 cup dark chocolate chips
Preheat oven to 350 degrees.
In a medium mixing bowl, beat egg and coconut sugar for 1 minute.
Add the next 4 ingredients. Mix well. Fold in chocolate chips. Drop rounded tablespoons onto a parchment lined baking pan and bake for 10-12 minutes. Let cool and munch away!
