A shout out to Costco where I picked up smoothie ingredients. Their Power Greens, So Delicious coconut milk and the organic frozen berries make whipping up delicious morning smoothies so convenient!
Both of these smoothie recipes have been added to our regular rotation of breakfast smoothies. I hope you like them as much as we do!
1 1/3 cups So Delicious Coconut Milk, unsweetened
2 cups well packed mixed organic Power Greens (baby spinach, chard and kale)
1 Bartlett pear, peeled and cored
a small handful frozen pineapple chunks
1 cup frozen mixed organic berries
1 inch piece of fresh ginger, peeled**
Place all ingredients in a high-powered blender or Vita Mix and blend until smooth and creamy. Add a little more coconut milk if needed to blend well.
** I like to have ginger ready to go. Peel fresh ginger and chop in 1 inch chunks. Store them in the freezer. Every little make ahead step helps with convenience.
The following protein shake is slightly adapted from the cookbook The Longevity Kitchen, another winner by Rebecca Katz.
Berry Protein Shake (makes 2 cups)
1 1/2 cups almond milk
1 cup frozen blueberries
1/2 cup frozen strawberries
1 tablespoon your favorite protein powder, either whey or rice
1 heaping tablespoon of sunflower seed butter or almond butter
1 tablespoon ground flax seeds
1 teaspoon honey
lemon juice (optional)
Place all of the ingredients in a blender or Vita Mix and blend until smooth and creamy. Taste test to see if it needs a squirt of lemon juice. Yum!
