This recipe is Whole30 compliant with homemade taco seasoning (recipe below) and home canned salsa, but you can sub out a taco seasoning packet and a basic tomato salsa of choice.
With only 6 ingredients that you probably have in your pantry, it comes together fast and you can just leave it alone to cook for 6-7 hours.
Who doesn’t love that when your spending the day either indoors or outdoors with your favorite people? And it makes the house smell sooo good!
Serve it with tortillas and favorite toppings or for Whole30-ers, serve as a base for Mexi-Bowls with Cauliflower Rice and slaw. Make it easy on yourself and cook up a bag of Trader Joe’s frozen cauliflower rice. Or use this recipe and make your own.

4 organic chicken breasts (about 2 – 2 1/2 pounds)
1 medium yellow onion, sliced thin
1 large green bell pepper, cut in thin strips
1 large red pepper, cut in thin strips
1/4 cup homemade taco seasoning (recipe included; alternatively use a taco seasonings packet)
1 cup salsa
1/4 cup chicken broth or water
2 1/2 tablespoons chili powder
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon oregano
1 teaspoon smoked paprika
1 teaspoon ground coriander
1/2 teaspoon cayenne pepper
2 teaspoons ground cumin
2 teaspoons sea salt
2 teaspoons black pepper
Rinse chicken breasts and pat dry. Rub taco seasoning all over chicken and place in a 4 quart slow cooker. Top with sliced onions and peppers. Pour salsa over ingredients and add water or chicken broth. Cover and cook on low for 6 hours or on high for 3 hours. Shred meat with 2 forks and serve in tortillas with a slaw, guacamole and salsa or in bowls with cauliflower rice, avocado, salsa and greens or slaw. Top everything with Smoky Ranch Dressing. It goes from being great to amazing!
Combine all ingredients and mix well. Use 1/4 cup in above recipe. Store remainder in an airtight container.
