4 organic chicken breasts (about 2 – 2 1/2 pounds)

1 medium yellow onion, sliced thin

1 large green bell pepper, cut in thin strips

1 large red pepper, cut in thin strips

1/4 cup homemade taco seasoning (recipe included; alternatively use a taco seasonings packet)

1 cup salsa

1/4 cup chicken broth or water

taco seasoning

2 1/2 tablespoons chili powder

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon oregano

1 teaspoon smoked paprika

1 teaspoon ground coriander

1/2 teaspoon cayenne pepper

2 teaspoons ground cumin

2 teaspoons sea salt

2 teaspoons black pepper

Directions:

Chicken:

Rinse chicken breasts and pat dry.  Rub taco seasoning all over chicken and place in a 4 quart slow cooker.  Top with sliced onions and peppers.  Pour salsa over ingredients and add water or chicken broth.  Cover and cook on low for 6 hours or on high for 3 hours.  Shred meat with 2 forks and serve in tortillas with a slaw, guacamole and salsa or in bowls with cauliflower rice, avocado, salsa and greens or slaw.  Top everything with Smoky Ranch Dressing.  It goes from being great to amazing!

Taco seasoning:

Combine all ingredients and mix well.  Use 1/4 cup in above recipe. Store remainder in an airtight container.
