Oh. My. Goodness. These are dreamy and delicious, tasting decadent but they’re healthy. Quick to make in a food processor with an “S” blade and they don’t require cooking, Chocolate Peppermint Protein Bites are holiday inspired, and they make a great snack to have around the house or to bring to a holiday party.
I came home after an intense day at work and wanted to whip up a healthy, low maintenance snack and these were the results! Dynamite!
Lets get started. Have these ingredients handy. A note about chocolate protein powder, I have used Thorne Vegan or Isagenix but there are other varieties on the market. Please see which one you like best. These are made with Isagenix Lean chocolate protein powder. Also I have found doterra to be the most potent when it comes to peppermint oil.
Put cashews, oats, and hemp seeds in a food processor with an “s” blade.
Add the rest of the ingredients except for the shredded coconut.
Blend really well-you know, until the dates are mixed into everything and are unnoticeable.

1 cup raw unroasted and unsalted cashews
1/2 cup gluten-free rolled oats
2 tablespoons hemp seeds
1 1/2 scoops of your favorite chocolate protein powder
8 pitted dates
8 tablespoons cashew butter (a heaping 1/2 cup-I used Trader Joe’s Creamy Salted Cashew Butter)
1 teaspoon vanilla
3 drops doterra peppermint essential oil
1 tablespoon full fat coconut milk (or any other non dairy milk, or water)
1/4 cup enjoy life chocolate chips
1/3 cup shredded unsweetened coconut
In an food processor with an “S” blade, place the cashews, oats, and hemp seeds. Pulse until ground to a fine powder. Add protein powder and pulse to mix.
Add the dates, chocolate chips, cashew butter, vanilla, peppermint oil, and coconut milk (or water). Blend until dates are pureed and all is mixed well. The “dough” should all gather into a ball in mixer bowl when done.
Pour shredded coconut into a pie pan. Roll mixture into 1 1/2 inch balls and coat with coconut. Makes approximately 25. I like to store mine in the freezer. Enjoy!
