Everyday life has been cranked up a notch with our business launching into the summer travel season with great intensity. I come home wrung out, without much drive to prepare anything creative. What’s ready in the garden gets put on the table in the most basic way. As it turns out, simple and fresh can be delicious and quick!
I’m thankful for my Vita-Mix. It’s whipping up a variety of breakfast smoothies with garden greens.
This Key Lime Pie Smoothie is my newest creation. Even my hubs, who doesn’t love limes, loves this! I’ve made it more times than I can count.
I must give credit to where credit is due, however. Our daughters and daughter in-law are all exceptional healthy cooks.
We all inspire each other and this one was inspired by our oldest, who visited from Nashville a few weeks ago. She’s always blending up smoothies in different colors for her 3 1/2-year-old daughter Haven.
She’ll say, “Haven, do you want a yellow smoothie…?” To which Haven replies, ” yes, I want a yellow (red or green) smoothie, please!” While here, Kyah made a Lemon Meringue Pie inspired smoothie, which was my inspiration for this Key Lime Pie Smoothie.
Smoothies are a healthy fast food, taking only 5 minutes to make and you’re out the door, with breakfast in hand! To boost nourishment, flavor and body, I like to add granola to the smoothie while blending, and while you’re at it, sprinkle some on top!
They also make great late afternoon snacks for all ages. Freeze leftovers in popsicle forms for kids summer treats.
Here’s the simple recipe. Try it and give me some feedback. I always like feedback.
4 cups loosely packed Swiss chard or spinach
2 cups dairy free milk or DIY Almond Milk
3/4 cup orange juice
2 pitted dates
6 tablespoons fresh lime juice
1 – 2 frozen bananas
2 tablespoons of homemade or store bought granola and extra for on top
2 tablespoons vanilla protein powder
Place all ingredients in a Vita-Mix blender and blend until smooth and creamy. Pour into glasses and serve with a sprinkling of granola on top.
