While it’s still snowing in several parts of our country (and in our city) let’s dream about soon to be spring and then… summer! Our long days of summer in the northwest are beautiful…not too hot, clear and sunny. We squeeze in as much outdoor time as possible. I like to have whole meal salads on hand any time of year, but especially in the summer when fresh vegetables and herbs are abundant. With the addition of whole grains or noodles, and lean protein you have a satisfying meal in a bowl. A perfect make ahead option, they are a healthy and convenient way to keep in – house family or friends, well fed, and are a welcome addition to barbecue’s and picnics. The leftovers are great for lunch the next day.
In a comfortable home setting, this class is designed to equip guests with practical skills, nutritional and product information that encourage the transition away from processed food products and moving towards whole foods salads using fresh vegetables, herbs and whole grains.
Whether standing alone as the main course, or serving as a side, this class features recipes for meat lovers and vegan eaters, also for those with gluten and dairy free preferences. The gluten and dairy free salads are Quinoa Tabbouleh and Sesame Brown Rice Salad with Chicken. All of these recipes will put to good use the fresh produce from our area that starts becoming available in early spring and lasts through late summer. You will find the Peanut Noodle Vegetable Salad a breeze to put together. The Thai Tofu (or Steak) Salad with Soba Noodles makes for a satisfying spring or summer meal for the flexitarian table, and the Roasted Beet and Farro Salad adds a fun variety of ingredients with vibrant color.
** Class update; because of the growing interest in gluten free eating I am going to also teach GF Artisan Bread, which is amazingly easy, and delicious. I am so excited to share this with my GF friends that I can’t wait for another class. You will be amazed that you can bake & eat that fresh, crusty bread, once again!
